Avocado, Mixed Greens and Pumpkin Seed Pesto/Dip

This is an incredibly nutritious and delicious way to get lots of greens and other nutrient rich foods into us. The avocados contain glutathione - a very potent antioxidant to look after our cells, the mixed leaves contain iron, chlorophyll, folic acid and vitamin C, the pumpkin seeds are excellent for our immune system and contain wonderful omega oils and soluble fibre.
Serve this as a dip or as a pesto - delicious with roast baby potatoes or on oatcakes with hummus or roast Mediterranean vegetables.

Ingredients

1x100g bag of rocket, spinach and watercress leaves pre washed (Tesco or Marks and Spencers) organic if possible
1 medium ripe avocado peeled and de stoned
2 oz pumpkin seeds soaked for at least 2 to 4 hours
Zest of 1 lemon and juice of ½
2 tbsp of extra virgin olive oil
½ tsp sea or himalayan salt
1 - 2 cloves garlic
black pepper
2 tsp water

Method

Drain the pumpkin seeds and put with all the other ingredients into a food processor and process till smooth. Check the seasoning and spoon into a bowl and serve with the above.
