Chewy Honeyed Granola

This is a perfect on-the-go breakfast, 20 minutes work at the weekend will give you a satisfying jar full of a week’s worth of homemade feel-good breakfast. Use whatever fruit and nuts you like best and experiment with different combinations.

Makes 10 servings

Prep time: 10 minutes
Cooking time: 15 minutes

Ingredients

4 large handfuls of oats

2 large handfuls of mixed nuts (pecans, almonds, hazelnuts, brazils)

2 large handfuls of dried fruit (chopped dried apricots, dried sour cherries, dried cranberries, raisins)

1 handful of pumpkin seeds

2 tablespoons of honey

1 tablespoon of mild olive oil

To serve – per serving:

A few spoonfuls of natural yoghurt (low fat if you like)

or

A little semi skimmed milk

A handful of berries

Method

Preheat the oven to 180°C.

Chop up any bigger nuts then place the oats and all the nuts on a large baking tray, drizzle with the honey and oil and mix well, place in the hot oven for 10 minutes to toast.

After 10 minutes they should smell good and be turning a bit golden, add the fruit and the seeds, give the whole lot a good mix and toast for a further 5 minutes.

Allow to cool then store for up to a month in an airtght jar.

Serve a few tablespoons of granola topped with milk or natural yoghurt and some berries.
