Recipe: Low GL Granola Delicious for breakfast

Recipe: Low GL Granola

Delicious for breakfast or as a snack with fresh berries and natural yoghurt. 

This granola is made without using dried fruit. Dried fruit is very sweet and raises blood sugar levels and with the Low GL way of eating we try to keep the blood sugars balanced by not eating sugary foods. However if you want to use dried fruit the best options are cherries, blueberries or apricots. 

Ingredients

6 oz porridge oats 

4 oz jumbo oats

2 oz sunflower seeds

2 oz pumpkin seeds

2 oz sesame seeds

2 oz desiccated coconut

4 oz pecans or walnuts roughly chopped or pulse in a food processor until chopped small but not ground

4 oz almonds chopped as above

3 oz softened coconut oil

3 tbsp maple syrup or honey

3 tbsp xylitol (Low gl fruit sugar) available in Health and Herbs  

Method

Mix all dry ingredients in a bowl including the xylitol.

Melt coconut oil and syrup or honey in a small saucepan.

Add to the dry mix and mix well till everything is coated.

Spread half the mixture thinly in a roasting tin.

Brown gently in a moderate oven 180 electric or gas mark 5, stirring every 5 minutes to avoid burning for about 15 minutes in total, then repeat with the rest.

Or leave on a low temperature about gas mark 3 or 150 electric for about an hour or more depending on your oven and stir occasionally until it is lightly browned. I prefer this method - slow cooking helps to preserve the omega oils in the nuts and seeds.

Cool and store in an airtight container. It will keep well for up to a month in a cool place. 

Serve with almond, soya, rice or cows milk or yoghurt and some mixed berries, sliced banana, grated apple or chopped pear.

Delicious as a dry snack too.

An ideal serving size if you are watching your weight is a 50 to 60 g bowl.
