Yeast is a type of microorganism (classed as fungi) that is used as a leavening agent in baking and as a fermenting agent in the production of alcoholic drinks. Brewer’s yeast and baker’s yeast typically belong to different strains (there are over 1500 known yeast species) and brewer’s yeast in particular is a rich source of essential minerals and B vitamins.
A form of deactivated yeast commonly known as ‘nutritional yeast’ is sold as a nutritional supplement, particularly aimed at vegans and vegetarians looking to make up for the nutrients absent in their meat-free diet. It has a savoury, cheese-like flavour that makes it a popular cheese substitute for non-dairy consumers. It provides a rich source of protein, vitamins and minerals (especially B vitamins) whilst being low in fat and sodium.
Yeast products (including ‘yeast extracts’ such as Marmite and Vegemite) can often be fortified with vitamin B12, a substance that doesn’t naturally occur within the yeast itself. B12 is essential for maintaining healthy blood and a healthy nervous system and fortified yeast products can be a good source of B12 for vegans and vegetarians.
