Cod with Roasted Winter Veggies

Serves 2

Prep time: 10 minutes
Cook time: 55 minutes

Ingredients

1 teaspoon olive oil

2 teaspoons runny honey

1 lemon

1 butternut squash, quartered and deseeded

1 large sweet potato, peeled and cut into chunks

1 large carrot, peeled and cut into chunks

1 sprig rosemary, leaves picked and roughly chopped

2 chunky pieces of skinless cod fillet, each approx 150g

Sea salt and freshly ground black pepper

Method

Preheat the oven to 200ºC/400ºF/gas 6.

In a small bowl, mix together the oil, honey and juice and zest of the lemon.

Put all the prepared veggies in a big baking tray and pour the honey mixture over it and sprinkle over the rosemary, toss the whole lot together to coat. Cook for about 45 minutes until beginning to char and everything is nice and soft.

Season the cod with a little salt and pepper and place the pieces of cod onto the tray on top of the veg and continue to cook for 10–12 minutes.

Serve with a green salad.
