Recipe: Date, Walnut and Oat scones

These delicious scones are perfect for breakfast or with your morning coffee. They can be dairy free if you use soya or rice milk and coconut oil.

Heat the oven to gas mark 6 or 200 electric

Ingredients 

4 oz porridge oats
4 oz spelt wholegrain flour or ordinary wholemeal flour
2 oz finely chopped walnuts
6 chopped dates – medjool work well as they are sticky and delicious
1 large egg beaten
1 tsp baking powder
2 tbsp melted butter or coconut oil
1 tbsp soft brown sugar
6 tbsp milk – cows, soya or rice

Method

Put all the ingredients in a bowl  -except the egg, butter or oil and milk.
Mix well and make a well in the centre
Add the egg, butter or oil and the milk.
Mix to a stiff dough.
Place on a floured surface and press down to about 2 inches or 10 cm thick.
Stamp out rounds and place on a floured baking tray.
Cook in the centre of the oven for 15/20 minutes until lightly browned.
Cool on a wire rack and serve with butter and honey.
